French onion soup is a favorite in our household, so a few times a year we make a big batch and can it for later. Makes an easy lunch to take to work with a crusty baguette and hunk of cheese.

We used to buy store-bought soups for lunch, but I hate how much sodium and other random crap they have in them.

Last time I tried to eat canned soup (the brand will remain unnamed) I got an instant migraine!

Now what is in a can of soup that is so nasty my brain decided to riot?!

How to Make French Onion Soup in the Crockpot​


To make this French Onion Soup recipe in the crockpot, simply slice your onions into rounds and layer them in your crockpot.

If your crockpot tends to run high, pour some olive oil to coat the bottom and prevent them from sticking.

Slow cook your onions (caramelize them) for 8-10 hours on low or overnight. Stir occasionally to prevent them from sticking.

Caramelizing onions (like the name suggests), releases the natural sugars in the onion and makes a rich, deep, delicious and sweet star of the dish!

Once your onions are caramelized, add the broth and cook for an additional 6-8 hours.

If you have enough room in your garden, grow your own onions! Onions are super easy to grow and very low maintenance.

To serve at home, heat up soup, and add a bit of toast and stinky cheese to the top and broil until cheese is melted. YUM!

How to Make French Onion Soup In the Crockpot (For Canning)​

Yield: 6 pint jars

Ingredients​

  • 8 cups of sliced white onions
  • 1 Tbsp olive oil
  • 1 1/2 cups water
  • 1/2 cup red wine
  • 8 cups beef broth
  • 1/2 teaspoon thyme (optional)

Instructions​

  1. Place the olive oil and onions in your crockpot and saute on low for 4 hours or until caramelized.
  2. Add the water, broth, wine, thyme, salt and pepper to taste. Leave on low heat while you prepare your pint mason jars.
  3. Pour your French onion soup into the pint jars, leaving 1" headspace and affix the lids and rings.
  4. From here you can keep them in the fridge for eating right away, freeze your mason jars with the soup inside, or pressure can them.
  5. To pressure can your French Onion Soup, preparing your canner according to directions and pressure can your pints for 60 minutes or your quarts for 75 minutes.
